This recipe just happens to be keto friendly, low carb and full of flavor. The main ingredient that makes this recipe so delicious is Everything but the Eloté seasoning from Trader Joes. If you don't have Trader Joes near you, you can order it on Amazon. It is of course a bit more expensive on Amazon but quite frankly totally worth it!

This is a recipe that you can double or triple to have as a side dish for meals all week long or you can make a single serving for one meal. You're going to want to make much more once you try it, just try it and see.

I personally used the fresh riced cauliflower, but you could easily used frozen as well.


  • 2 cups riced cauliflower

  • 1/3 cup reduced fat cream cheese

  • 1 cup shredded cheese of your choice

  • 1 tsp Everything but the Eloté seasoning from Trader Joe's

  • Salt and pepper to taste


  1. Soften the cream cheese in a skillet over medium heat in a skillet

  2. Add cauliflower until well combined

  3. Add Everything but the Eloté seasoning, stir

  4. Add cheese, salt and pepper to taste, cook until desired texture. The least amount of time you cook it the more crunch it will have to it.

For a non dairy option you can use 1/3 cup of a milk alternative or dairy free cream cheese and shredded cheese
