MACRO FRIENDLY CHILI

Chili is hands down a comfort food in the cold seasons. It can be prepped in bulk and frozen to make food prep even easier. There are countless ways to modify and add extra ingredients to make it perfect to your liking.

Lets dig in!


Ingredients:

  • 2 lbs lean ground beef (90% or more)

  • 1 1/2 C of brewed coffee

  • 200g onions, diced

  • 100g bell pepper

  • 1 tbsp. minced garlic

  • 1 can chili beans

  • 1 can diced tomatoes

  • 1 small can diced green chiles

  • 1 can tomato paste

  • Seasonings (these are suggestions…you can modify these to your preference)

  • 1/8 tsp cayenne

  • 1/2 tsp oregano

  • 1 tsp salt

  • 1.5 tsp cumin

  • 1/4 C chili powder

  • 1/2 tsp smoked paprika


Instructions:

  1. In large pot (or Instant-pot), sauté beef with onions, garlic and peppers.

  2. Drain grease.

  3. Add everything else. Mix well and let simmer. Add water to reach desired consistency.

  4. The longer it simmers, the better it is.

Modifications:

- Top with sour cream or plain greek yogurt, cheddar cheese or even avocado

- Make as chili mac with regular pasta or chick pea pasta

- Put on top of a bed of lettuce to make a chili salad bowl.

- top on a baked or sweet potato
