Healthy, sustainable dishes that make you feel good and look good.
Keep it cool with a cucumber mint gazpacho

Ingredients (serves 2-3)
2 large cucumbers, peeled, seeded, and chopped
1 cup plain Greek yogurt
2 tbsp fresh mint leaves
1 tbsp lemon balm leaves
1 garlic clove
Juice of 1 lemon
Salt and pepper to taste
Olive oil, for drizzling
Optional garnish: crumbled feta, toasted pine nuts
Instructions
Combine cucumbers, yogurt, mint, lemon balm, garlic, and lemon juice in a blender.
Blend until smooth. Season with salt and pepper.
Chill for at least 1 hour.
Serve in bowls, drizzled with olive oil and garnished with feta or pine nuts if desired.
Holy Basil & Mint Thai-Inspired Beef Skewers
Herbaceous, juicy, and grill-ready — pairs beautifully with rice or salad.

Ingredients (serves 4)
1 lb flank steak or sirloin, thinly sliced against the grain
2 tbsp chopped holy basil
1 tbsp chopped mint
2 tbsp soy sauce
1 tbsp fish sauce
1 tbsp lime juice
1 tsp brown sugar
1 garlic clove, minced
Bamboo skewers, soaked if wooden
Instructions
In a bowl, mix holy basil, mint, soy sauce, fish sauce, lime juice, sugar, and garlic.
Marinate beef strips in mixture for at least 30 minutes.
Thread onto skewers and grill 2–3 minutes per side.
Serve with lime wedges and fresh herbs.
