5 reasons to love carrots:

  • Carrots are rich in compounds called carotenoids which get converted to vitamin A. This is beneficial for eyesight, our immune system and healthy aging.

  • When we cook carrots, it can improve the bioavailability of the carotene.

  • Carrots are high in fiber and low in calories which means including vegetable like carrots more into the diet can aid in weight loss.

  • Carrots are a great source of prebiotics that help to feed the good gut bugs which in turn produce short chain fatty acids. Short chain fatty acids are one of the best protective compounds against colon cancer.

  • They are tasty, colorful and make a great portable snack!

Now lets get back to the recipe!

  • 1 pound carrots, julienned

  • 3 Medjool dates, pitted and diced

  • ¼ cup chopped pistachios

  • ⅓ cup finely chopped cilantro

  • ¼ cup mint leaves, optional

  • 2 tablespoons extra-virgin olive oil

  • 2 tablespoons fresh lemon juice

  • 1 tablespoon tahini

  • 1 tablespoon honey

  • 1 small garlic clove, grated

  • ¼ teaspoon cumin

  • ¼ teaspoon sea salt

  1. Place the julienned carrots in a large bowl and sprinkle the dates on top.

  2. Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, tahini, honey, garlic, cumin, and salt.

  3. Drizzle the dressing over the carrots and toss to coat. Sprinkle on the pistachios and cilantro and toss again. Sprinkle the mint leaves and serve.

pro tip:

  • Buy carrots that still have the stems attached. It helps to better grip the carrot when julienning them especially if you are using a hand held tool.

  • You can also use a mandolin slicer with a julienne attachment instead of a hand help julienne peeler
