Easy chicken salad

Summer is here and the routine food prep of meat, rice and veggies was getting boring.

So I threw a few ingredients together to make this chicken salad and the flavor was impressive!

This recipe is mayo free (I dislike mayo very much) and instead uses greek yogurt. This could easily be made with mayonnaise, but of course it would not be quite as macro friendly . Just a heads up, having a food scale will make this recipe much easier to make. This can be eaten on a bed of lettuce or as a sandwich. Enjoy!


This recipe makes 3 servings. Total approximate macros for each serving:

Ingredients

  • 9 oz. chopped cooked chicken breast

  • 1 cup fat free greek yogurt.

  • 5.8 oz seedless grapes

  • 1/2 cup diced celery

  • 1/2 cup diced red onion

  • 1/4 cup halved or crushed pecans

  • 1 tbsp sweet peach white balsamic vinegar OR any other choice vinegar besides regular balsamic. Can also be substituted with 1 tbsp of lemon

  • 1 tsp dill

  • salt and pepper to taste


Instructions

Add all the ingredients and mix together well.


Other additions that can be made to this recipe: poppy seeds, chopped apples, walnuts, scallions, lemon zest.
