Malabar spinach and noodle bean stir fry with Thai basil

If you are in Texas, Malabar spinach is flourishing right now as an early fall crop and is so simple to grow (even for those of you without a green thumb). Try this quick recipe that highlights this tasty vegetable!

Ingredients (serves 2-3 as main dish)
  • 2 cups Malabar spinach leaves, washed and chopped

  • 1 cup noodle beans, cut into 2-inch pieces

  • 1 small carrot, julienned

  • 3 cloves garlic, sliced

  • 2 tbsp soy sauce

  • 1 tsp sesame oil

  • 1 tbsp neutral oil for stir-fry

  • 1 handful Thai basil leaves







Instructions

  1. Heat oil in a wok (or regular frying pan), sauté garlic until golden.

  2. Add noodle beans and carrot, stir-fry 3–4 minutes.

  3. Toss in Malabar spinach, soy sauce, and sesame oil. Cook just until spinach wilts.

Turn off heat, toss in Thai basil leaves, and serve immediately.


Perfect over jasmine rice or noodles. Serve with grilled chicken to make it a complete high protein meal.
