High Protein Veggie Baked Ziti

  • high protein penne pasta (chickpea or lentil pasta)

  • 1 zuchinni

  • 1 yellow squash

  • 1 jar of no sugar added marinara sauce

  • 12 oz of 93% lean ground beef

  • 1.5 cup low fat cottage cheese

  • 3 cups spinach

  • 3 cups part skim mozzarella

  • Italian spices


  1. Preheat oven ton 350 ℉

  2. Spray a 9 x 13 in pan with non stick spray

  3. Prepare pasta per directions on package. Prepare ground beef in a separate pan while pasta is cooking.

  4. Dice the zucchini and squash and place in baking pan.

  5. Add the cottage cheese on top of the veggies and spread evenly in pan.

  6. When pasta and ground beef re done cooking, add to baking dish.

  7. Pour in marinara and stir until evenly combined. Top with Italian spices (rosemary, basil, thyme, oregano, garlic, salt pepper)

  8. Top with spinach, mozzarella.

  9. Cover with foil and bake for 30 minutes.
