One package of The Great Low Carb Bread Co. orzo pasta
4 oz fat free crumbled feta cheese
1/4 cup sun dried tomatoes, diced
one cucumber seeded and diced
1/2 cup red onion, diced
1/4 cup artichoke hearts, diced or quartered
1 handful baby spinach
one lemon squeezed
1/4 cup extra virgin olive oil
fresh cracked salt, pepper to taste
2 tbsp oregano
Makes 4 servings. Approximate macros per serving:
24 grams protein
8 grams carbohydrates ( not including carbs from all veggies)
8 grams fat
You can play around with this recipe a lot. You can add chicken or shrimp. For a variety of veggies you can add peas, fresh chopped tomatoes, bell peppers, black and green olives, fresh basil leave... Get creative with it!
