
Another Pinterest win for food prep with this recipe. There are a few modifications you can make. Here is the original recipe and the modifications are at the end.
Ingredients
2 lb Ground Chicken (92% fat free)
1 Tbsp Chili Oil
1/2 C Buffalo Sauce
4 Tbsp Cider or Rice Vinegar
2 tsp Ground Ginger
2 tsp Garlic Powder
1 tsp Kosher Salt
1 tsp Black Pepper
1 tsp Red Pepper Flakes
Scallions and everything but the bagel seasoning as preferred
Instructions
Heat a skillet over medium-high heat with the chili oil. Brown both sides of the chicken, about 3-4 minutes per side, before mincing and fully cooking.
While the chicken cooks, whisk the remaining ingredients together in a mixing bowl.
Once the chicken is fully cooked, add the sauce to the pan and cook until thick
Serve in a bowl with rice or riced cauliflower and enjoy!
Modifications
Rice wraps:
Soak rice paper in water for 5 seconds on each side
Place on dry plate, spoon small amount of ground chicken in center. Top with chopped scallions and everything but the bagel seasoning to your preference. Wrap and enjoy!
